I also make a chicken and rice meal like that but I do it long version. I place 3-4 boneless skinless breasts in a well sprayed crackpot and pour 2-3 large cans of cream chicken soup cover and cook for 6-8 on high 3-5 on low. Break up the chicken a little and serve over bumpy mashed pots or fresh steamed rice. The soup is plenty salty but maybe a little pepper. Its a fav around here and you got lots of left overs for all the next day.

I just made this for the first time last night and I absolutely love it. My boyfriend wants me to add more chicken to it but that's about it! I read in the comments that making the rice with chicken broth instead of water adds more taste. I'll definitely have to try that next time!
Uncooked rice and chicken and broth and water. Closed the lid and the seal popped up set it on pressure cook and set it for 30 min on high pressure cook . The red button never came to show it pressurized .then it showed the burn message when time was up . Opened it and the chicken was not completely cooked or the rice on top
I have made this several times and it turns out wonderful. We like extra rice so I increase the rice to 1 cup and increase the chicken broth to 1 3/4 cups. I also steam the broccoli for 3 minutes before I add it to the pot.

I did use boneless skinless chicken breasts and it turned out very good. 90 minute cook time rice and chicken done. After dinner I cut the leftover chicken into bite-size pieces, mixed it with the leftover rice, and stirred in some steamed broccoli florets, for our lunches at work today!. This recipe is a keeper! If you remember you mixed the raw rice with Campbell Cream of Mushroom Soup, then the same can is full of milk, layer this in a 13 x 9 casserole pan, my favorite is here and put the chicken on top. You bake covered with aluminum foil in the oven at 350 for one hour then remove the foil and bake 15 minutes more.
If you only have one Instant Pot you have several options. Make the rice first and remove it from the Instant Pot. Transfer the cooked rice into an oven-safe-covered dish and keep warm while the chicken cooks.

The recipe I had from my mom was in the oven also, but I always get the rice to undone. This way I good the chicken in the pressure cooker and the rice in my rice cooker, perfect rice and I have my hands free to spend time with the kids. Thank you for your comment

Very delicious but not time consuming. I recently had surgery and cannot eat anything real spicy or saucy, and didn't have any cream soups at home so I searched chicken rice casserole without canned soup...this was so easy to make...I did prebook my chicken breasts and used two of the 1 cup bags of precooked brown rice...didn't have Ritz crackers, so I used crushed saltines with a little melted butter instead. My boyfriend loved it almost more than I did...will definitely make again.
So good to make your own soup rather than using a can as those cans of soup are always so salty. And the Ritz cracker crumbs topping gives it a nice and crunchy finish.
